Organic Chef Tom’s ~ Summer Fruit Jello

This summer berry filled gello is refreshing, tasty and good for you! This recipe calls for a wonderful gelling ingredient from the sea ~ agar, agar which makes this delightful dessert 100% vegan.

Jello Ingredients

4 cups organic apple juice (1 Quart)
4 Tablespoons Agar Agar Flakes
1 cup organic strawberries sliced (or  

raspberries, blueberries...) save a few whole to sprinkle on top!

Jello Preparation

Pour apple juice in pan and add agar flakes and let sit for 5-8 minutes to soften.

Turn on stove and bring juice and agar to a boil stirring occasionally to keep agar from sticking to bottom of pan.

Reduce heat and simmer, stirring occasionally for about 3-5 minutes until all agar is dissolved.

Pour 2 cups or half of the liquid jello into individual glass dessert bowls and allow to cool for 15 minutes before adding sliced berries. Sit in refrigerator to gel.
 

Tahini Custard Topping

2 Tablespoons organic sesame tahini
½ teaspoon vanilla
½ teaspoon cinnamon
½ lemon, juiced (optional)

Tahini Custard Preparation

Leave 2 cups (half) of the liquid jello in the pan and allow to gel. You do not need to refrigerate to gel. When the jello is completely jelled, spoon into blender with tahini, vanilla, cinnamon and lemon juice if desired and blend until creamy. If too thick add 1 tablespoon of juice or water or a little more as needed to blend. Chill in refrigerator.

Serving

Top jelled dessert with chilled tahini custard and fresh whole berries and a mint leaf for color. Serve and enjoy!
